The institution said Saturday that soup based on negative space is now part of the cultural record, after visitor research showed demand for lunch that could be interpreted across departments.
The soup contains a carefully measured absence surrounded by bowl, heat, and the memory of vegetables.
"Soup has always been about containment," said Ilya Senn, culinary programs curator. "We are asking what happens when containment becomes the ingredient."

Servers ladle around the central void and instruct guests not to disturb the part that is doing the conceptual work.

Diners described the dish as elegant but difficult to finish, especially after learning the most important part was not there.
What Happens Next
The cafe plans to pair the soup with a small roll positioned just outside usefulness.
